      Carr (The Modern Cheeseboard) offers a distinctly innovative look at cheese and pairings. Across three sections--"Introduction to Cheese Pairing," "Cheese Pairing Charts," and "200 Ultimate Cheese Pairings"--readers will learn about different types of cheese: fresh, bloomy, hard, and more. This book also tells them how to make each cheese a specific type and how to decide if a particular cheese is for them. Readers will learn how to enhance, contrast, balance, and bridge flavors from each cheese to various accompaniments. For example, Comt� is a melting cheese, and readers are encouraged to try this with a crispy cracker, or to create a contrast between crumbly Pecorino with the silkiness of bresaola. Recipe highlights include tortilla with vintage Manchego and chorizo, homemade chocolate digestives, Colombian hot chocolate with gooey cheese, confit potato and cream cheese canap�s, and more. The usual pairings of chocolate, nuts, fresh and dried fruit, and wines are addressed, but the combinations are fresh and forward-looking.
