"饮食安全与健康"项目式课程的学习,能够培养学生的模型认知与证据推理、科学探究与创新精神、科学态度与社会责任等方面的核心素养,以及跨学科问题解决的能力。该课程于 2021 年经重庆市教育委员会批准立项,成为重庆市普通高中精品选修课程,并经实践、完善,最终形成项目研究成果———《饮食安全与健康》一书。本书共 12 个项目,涉及饮料制作安全、传统米酒和高粱呷酒制作、果蔬加工或烹饪安全、食物保存安全、乳制品加工安全等内容。
