Despite the title, Snyder's (One Pan, Two Plates: More Than 70 Complete Weeknight Meals for Two) latest book actually focuses on weeknight meals for a flexitarian diet. The author uses her 30 years of experience as a caterer, baker, cooking instructor, and food writer to showcase dishes appealing to those looking to reduce their meat intake. The recipes feature a variety of proteins (e.g., beans, nuts, and tofu) in easy-to-make meals such as black bean tacos and General Tso's tofu. Also highlighted are a number of enticing pastas, soups, and pizzas, leading to a reliance on eggs and dairy as protein for many of the recipes, all of which boast easily acquired ingredients. An international flair among the assorted dishes (moussaka, latkes, chili, and tabbouleh) will inspire those partaking in a flexitarian regimen. Simple, hearty, and nutritionally complete, each one-pan wonder is made from scratch and fresh ingredients. Cooks need only utilize a few basic techniquesâbrowning, braising, and sauce reductionâfor single skillet cooking. Efficient in terms of preparation and cleanup (30 minutes to 1 hour per dish), Snyder's one vessel method yields two time-saving and satisfying plates.
